As the Sous Chef, your primary responsibility is to provide site-management for the Kids in the Hall Program, with a significant focus on catering and operations. Working collaboratively in a co-management role with the Café Manager, the Sous Chef is responsible for meeting Café and catering outcomes and delivering an exceptional customer experience that encompasses a social focus.

 

Hours: Full-time: Monday to Friday: 40 hours; weekend work may be required.

In Your Role You Will

  • Supervise and train all front of the house staff, catering personnel and youth participants in the Employee Readiness Program.
  • Build rapport with the youth, demonstrate compassion and empathy for high-risk youth
  • Conduct and complete supervisions, evaluations, goal development for front of the house staff and catering personnel.
  • Plans and creates menu items that align with current market trends in conjunction with the chef.
  • Demonstrates and instructs front of the house staff in the proper use of café utensils and equipment.
  • Ensure compliance of public health protocols and food safety standards with regards to food handling, storage and meals prepared by youth and kitchen staff.
  • Oversee catering and delivery production and ensuring proper transportation, handling and storage of goods and materials.
  • Adhere to Alberta Occupational Health and Safety standards, Hotel, Food and Beverage Policies, Labor Health Regulation and agency policies and procedures.

Education and Certifications

Required

  • Journeyman Cook/Baker Certified
  • Certifications: Pro-serve (or ability to obtain certification prior to start date), Food Handling, WHMIS, First Aid (CPR-AED)
  • Clear Police Check with Vulnerable Sector.
  • Clear Intervention Record Check.

Recommended

  • Journeyman Red Seal Certification
  • Diploma/Certification in a Culinary Discipline
  • Certifications: Aboriginal Awareness, De-escalation, Suicide Intervention, Harm Reduction, Trauma Informed Practices 

Experience

  • Minimum 5 years’ as an Sous Chef with catering experience.
  • Minimum 3 years’ baking experience.
  • Previous leadership in culinary field required.
  • Previous experience within fast casual dining environment is an asset.
  • Proven track record of cost control including food, equipment, labor and wastage to meet financial goals
