The Hallway Cafe Program offers a safe and supportive “go-to” place for at-risk youth. The Hallway Cafe Program offers employment readiness programming for youth as well as a source of revenue for the agency in food and beverage services. This dual focused model is known as social enterprise.

 

As a First Cook, you will primarily provide site support for The Hallway Café Program, with a significant focus on catering and operations. You will work collaboratively in a co-management role alongside the Director of Culinary and Sous-Chef to manage regular kitchen activities that includes: overseeing staff, aiding with menu preparation, ordering/stocking supplies, ensuring food quality, freshness and consistency, and ensures employee and program participants follow designated recipes.

 

You will be actively involved in activities related to business growth, staff orientation, training, inventory controls and all responsibilities associated with food service production. As the First Cook, you will have the opportunity to be an integral part of a multi-disciplinary team designed to provide wrap around support to high-risk youth.

 

Hours: Monday to Friday: Full time - 40 hours/week; may require weekends and/or evenings work.

In Your Role You Will

  • Provide support to all back of the house staff, catering personnel and youth in the Employment Readiness Program.
  • Build rapport with the youth, demonstrate compassion and empathy for high-risk youth.
  • Support service standards program curriculum for up to 40 youth annually as part of the Employee Readiness Program that is aligned to the goals and objectives of the social enterprise.
  • Evaluate and track progress for enterprise goals and objectives.
  • Monitor and communicate training needs for Café and catering personnel.
  • Feels, tastes and examines appearance of food prepared and cooked by youth and kitchen staff and informs staff of necessary adjustments so that food consistently maintained to standards of quality, innovation and presentation.
  • Demonstrate quality standards for food presentation and preparation with modern techniques and creativity.
  • Manage and support catering and delivery production to ensure proper handling, storage, and transportation of goods and materials.
  • Assist in problem solving, case management challenges, and removing barriers for the youth within the Multi-disciplinary Team.
  • Adhere to Alberta Occupational Health and Safety standards, Hotel, Food and Beverage Policies, Labor Health Regulation and agency policies and procedures.

Education and Certifications

Required:

  • Proserve Certification (or the ability to obtain this certification prior to the start date)
  • Food Handling Certification
  • WHMIS
  • First Aid (CPR-AED)
  • High School Diploma
  • Police Check with Vulnerable Sector.
  • Intervention Record Check.

Recommended:

  • Journeyman Red Seal Certified Cook or Baker
  • Diploma Certification in a Culinary discipline

  • Trauma Informed Practices

Experience

  • Minimum 3 years’ as a First Cook or Shift Supervisor
  • Minimum 1 years’ catering experience
  • Previous supervision position in culinary field required.
  • Proven track record of cost control including food, equipment, labor and wastage to meet financial goals.
  • Previous experience with fast casual dining is an asset.
